I've seen a number of setups with 3 or more monitors hooked up to a G5. I know that people have done this using additional (PCI?) Graphics cards. My question is, what card to use? Thanks in advance for any advice!

You can use any PCI video card compatible with OS X. It really doesn't matter. Just make sure whatever you go for can pump out enough resolution to power the screen you have planned for it.

I was looking into some of Matrox's PCI cards. Anyone know if they're Mac compatable?

Mac video cards need a Mac ROM, so they must make a version of the card for Mac. If they do, it should be clearly stated on their respective web sites.

if i understand what you're asking, most people use the ATI Radeon 9200 as it is one of the last PCI gfx cards made for the mac... it'll probably get you the best performance and be relatively easy to find... price should be about $130 i believe...

Excellent--just what I'm looking for.

I assume it's G5 compatable?
