Before Apple Marketstreet in Lynnfield MA, someone stole a mix of 30 brand new iPhone 14 Pro & 14 Pro Max models from my car. I think they followed me - seems like organised crime.

Wow, not a single activated iPhone. It will be difficult to prove chain of custody.

Apple doesn't block iPhones
Doubt Apple will help in any way. Apple won’t blacklist an iPhone paid with cash just because someone said it was stolen.

Back home in the EU, providers do block the IMEI number of phones that have been stolen. Is there a similar service in the US?

Not unless you bought it from a wireless carrier with a plan. Then the carrier could put it on a blacklist. I assume these are all contract-free unlocked devices.

Lots of people buy phones to resell, so an invoice alone doesn’t mean anything or let you do anything.
