What's the best route to go in upgrading to 4.2.1 while keeping my unlock? I'm currently on an iPhone 4 with Baseband 01.59

Only if you have 4.2.1 shsh blobs you can restore to that.
If you do create a custom 4.2.1 ipsw with pwnage and restore to that.
Then install ultrasnow from cydia to unlock.
 
This is a bit foreign to me. I'm guessing I dont have 4.2.1 blobs since the ones I saved are off my 4.0 iPhone 4.

You should run Tinyumbrella and find out exactly what shsh blobs cydia has on file for you.
Or just open up cydia and look at the top of the page.
It will list what versions you have available and only those you can restore to.

I'll try that. I bought it from someone else who said he never upgraded it. So if that's the car I guess there would be no shsh for 4.2.1 on file. I'll take a look still.
