I remembered now that it happened after i took my first HDR video!
This is what is posted on Apple forums and seems to fix for some:
"THE FIX
Download 'iPhone Explorer' (Google that one and it's free for Win/Mac).
Plug iPhone in and navigate to the PHOTODATA folder.
Locate these three files:
1. Photos.sqlite
2. PhotosAUX.sqlite
3. com.apple.photos.caches_metadata.plist
Save them to your computer.
Delete them from your iPhone.
Restart your iPhone and let if boot fully.
Open 'Photos' and wait for the iPhone to 'rebuild the library'.
Enjoy your thumbnails once more! "

This resolved the issue, but what exactly are those files? Why was it necessary to save them to the computer before deleting? Do they need to be re-added to the phone?

I tried the solution someone posted on the first page with no luck...
I'm not having problems with pictures, just with my videos I took back with my 3gs and now trying to sync to my iphone 4.
These are the steps I've tried all with no luck....
The solutions I've tried so far with no luck are as follows....
Erase videos/pics and resync them
tried changing the folder permissions via ssh
tried syncing the vids/pics from a different folder
erased "iPod photo cache" within the vids/pic folder (read that tip on the Apple website)
ssh'd into var/library/mobile/media/photodata and deleted the following files... 1.Photos.sqlite 2. PhotosAUX.sqlite
3. com.apple.photos.caches_metadata.plist
If someone can think of anything else to try or has a proper solution, please by all means let me know!

Maybe you should backup your phone, then restore it again then try the solution again!
