I am looking at a couple options for replacing my aging Asus VA32AQ's on both my Mac Mini 2018 as well as my upcoming M1 2020 Mac Mini that my wife is replacing with a new iMac.

One of the options I have considered instead of 2 monitors is a single Ultra-wide, such as the 49" Odyssey Neo G9. I have tons of desktop space so that is not a problem.

If it would help I have a Sonnet Breakaway Puck eGPU (RX560) that I could use with the 2018 Mini.

The question is would either or both the 2018 and 2020 Mini's support the G9 or other 5120x1440 ultra-wide properly?

My usage is mostly productivity, browser based WFH and streaming with a little light video and image editing from time to time. I am not a gamer.

Usb c should be able to support that resolution just fine on the M1. However, M1 unfortunately dropped support for eGPUs.

Yes, an M1 Mini will support 5120x1440 ultra-wide 49" properly on USB-C.

This is my current setup.

Can you please detail what connector you're using?
I am currently on an hdmi - hdmi connection and it's maxed at 3840 x 1080
Also tried a usb c - hdmi and I was getting an even less resolution.

Do I need a usb c - display port cable? (The monitor only has hdmi & display port inputs)
or is a usb c - display port adapter enough? (That's what's currently being shipped to me)

I did buy the monitor and currently have it on my Intel 2018 Mini with a standard HDMI cable. I am goi g to set up my eGPU next weekend and try it with a DP cable for G&Gs.

It seems to work fine at the 5120x1440 on the HDMI port. I will likely try it on a USB to HDMI or DP cable direct as well as on the M1 later on.

I am connecting USB-C to USB-C.

Connecting to LG 49WL95C-WE 32:9 UltraWide Monitor 49" (not the Odyssey, sorry).

I tried with 3 more hdmi - hdmi cables. I guess they're just ****** ones?
I ordered a 2.1 HDMI cable. hopefully that works.
If not, I'll try with a usb c - display port 1.4 one
If that doesn't work either, I am hopeless and just did a stupid 2000 dollars purchase on the monitor...

HD630 support from Intel.
Should be getting higher res than you are seeing.
Does it give more on "show all resolutions"?
 
Well, I did not get a chance to try it on my M1 as the monitor crapped out after 10 days and I returned it to Amazon today. While I did get the full resolution on my Intel Mini I suspect they still have QC issues with them.

I think I am going to stick with my Asus 32" monitors, they have been real workhorses for me.
 
If I put it in PBP, it shows correctly 2560x1440. I just don't get the double of that. which is 5120 in wide
I bought a 2.1 HDMI cable and still same results....

I wonder if you are in split mode? The monitor supports the ability to display two different inputs at the same time, it might be that the Mac is seeing one and not both sides.

yeah the last screenshot is in split mode (PBP = picture by picture)
Not sure if I made myself miss-understood, but I am having issues with it when PBP or PIP is off. so only one display.

Mac minis are limited to HDMI 2.0 and won’t do widths greater than 4096. You need a USB-C to DisplayPort Adapter or cable to get the full resolution.

My Intel 2018 Mini supports 5120 width with a HDMI cable, I don't know about the M1 though. Until the monitor went bad it worked fine at the full resolution of 5120x1440

I don't know as I returned it yesterday when it failed. It appeared to visually, I was able to get 3 full browser windows side by side.
 
I'm trying to do same combo.
The m1 does have problem and do not allow HiDPI on 1440 and 1080 so that is completely bukers for me.

What about intel mac m1 how does it behave ? Will it allow me HiDPI (windows alike) on Intel Mac Mini ?
