Suppose there will be a 5.5" iPhone 6...

What UI should it have? It seems a bit a waste of space to have the same interface as the 5/5S. It could make a better use of the space rather than just scaling it to fit. Although then again it might be a bit too small to have the iPad UI.

Is that a hint that we might see a new UI design for iOS 8?

well obviously only people at Apple know what the UI will be but I think that just a sea of icons on that size screen won't work.

iPad uses pretty much the same UI as the phone.

yes this is true. They limit the amount of icons to 20 (excluding the dock). I guess they could do this to a 5.5" screen, just space them out more.

The iPad got the short end of the stick during the development of iOS 7. Due to the rushed timeframe, the iPhone got priority and that's why many apps, features and UI elements look like blown-up versions of their iPhone counterpart, because that's exactly what it is.

If the next-gen iPhone is getting a display size increase, they better have iOS designed with it in mind because they still haven't gotten the iPad optimized for the new version of iOS.

I expect the UI to look exactly the same on a 5.5" screen but just scaled up a little.

Apple never tried to use iPad screen to the fullest...it is always the blown up iPhone UI... I do not see Apple going for Samsung's multi-windows approach or anything meaningful...it will just blown up one

Classic iOS actually used tablet-tailored UIs on the iPad.

I'd rather have either more space, or more icons, I don't want them to just be enlarged

I bet its going to look the same. The only difference being that the app icons would be more spaced out, like they are on the iPad.
