(8 Core GPU M1 all day long!) It is worth the $50 dollar price point. Better performance, better silicon, better bin! And potentially lower temperatures due to less voltage from being a better bin of silicon. ( I have personally seen this first hand)

The 8 core silicon is the grade that goes in to the $1300 base model M1 Pro 13"

Apple has simply offered a way to re-use silicon that didn't quit make the cut, and they just sell it at a slight discount. The (7 Core GPU bin) (Or throw them away?) (We're in a huge silicon shortage after all..)

Silicon is in high demand right now.. TSMC is slammed. You can't get CPU's, you can't buy GPU's.. It is a total mess due to silicon shortage. Apple knows this, so why waste it entirely? Plus, it is still (Almost fully functional). It just didn't quite make the cut. So it's sold at a discount.
