iPhone 6 Plus iOS 8 Version

Not sure if been mentioned but my 6 Plus has a slightly newer build number than what was released, 12A366

is it labeled 8.0, or 8.01 etc?

Very odd.
I found the download links for iPhone 6 iOS 8 and the 6 (4.7") build was 12A366, the 6 Plus was 12A365.

ignore that! Seems the website I got the links off, had it the wrong way around. I just tried restoring the IPSW I downloaded for my iPhone 6 (4.7") and it wasn't the right one...

I think the difference in build numbers is down to Apple packaging iWork apps in iOS 8.
