If I primarily consume content like YouTube videos and movies on my laptop (travel a lot), would I gain anything from trading my 13" MBA M2 for a 14" MB Pro? I do nothing CPU intensive -- just watch videos, check social media, and troubleshoot some Linux issues on a VM. How much of the YouTube content and Netflix actually benefits from 120?

Better speakers and HDR if your YT videos support it. The extra ram will help your VMs though.

120hz not needed unless you just want the smoother animations moving around the OS.

Simple answer: None.

You could feel a smoother movement from mouse pointer and UI as Sheepish said, you could feel that movies looks better in a 120hz screen because software interpolation is creating additional frames as you watch it. But it is so subjective that I don‘t think it will make a difference.
