How about expanding the page by clicking on the drag corner at the bottom right part of the window?
 
I think everyone is asking why do you want it to look like another program? Is there a feature you want to access or what?

I doubt there will be any plug-in to "skin" it. It's simply too new.
 
You kind of get a similar effect by doing the following:

  1. Click on the View button
  2. Click Show Layout

Now I know what you are talking about. It bothered me when I first starting using iWork 08. I got used to it. You could do something like what I did in this screenshot.

It's closer to what you want, but you're not going to get those large (not the same with showing layout) gray boarders.

The other option that is new to iWork 09 and I think will be useful is full screen. It give a dark room effect. Very cool.

what i really want to do is utilize every single inch of my screen. you know how when you first open iwork 09 it opens this tiny window? well, i want to maximize it to use 20 inches and have that border thing on the side. or is there no way to do that?
 
This annoys me too. I'm picky of little things, and would be something I'd like.

I was really hoping that Pages would remember Windows Sizes in this one..

Set the window size and position on a blank document, then save the blank document as a template. Then select that template when you open a new window.

You can also change the color of the full screen mode's black borders - they can be gray or any other color you prefer.
