I think we'll see storage bumps, a microphone, 802.11n (I know it's useless for mobile devices but I think apple will put N in both the touch and iPhone to spur sales), and probably a slight redesign of the case to bring it inline with whatever they do to the iPhone.
My guess is they'll change the wraparound steel for wraparound aluminum casing, since that seems to be the direction Apple is heading with all it's products. We'd likely see black and silver variants, like the classic, although Apple may reserve the black as the "premium" option.
I also think that if Apple can get out a 64GB iPod touch, they'll axe the classic completely.
