Why is there a FaceID app? is that normal? We never had a specific TouchID App, so why the FaceID one? is this another app that we use once to set up and then have to hide somewhere to keep the screen uncluttered?

Where did you see a Face ID app?
You set up Face ID under settings, just like Touch ID.
It's the last app on the main home screen. You can see it clearly at 2:41. Presumably to set up Face ID, like the Apple Watch app.
Probs for review purposes only so multiple people can easily test the feature for reviews?
This is a store demo device. Current store iPhones have a Touch ID App too, to let customers try their own fingerprint with the device.
