Hard drives in general are pretty cheap to buy. You can pick up a 750gb 7200rpm drive for about $80 or so. I would never buy 5400rpm because the 7200rpm is much faster and the prices is not that much different. I would say, if you an afford it is to go with a SSD, buy a small 120gb from OWC and then buy a portable external drive 1tb at 7200rpm fro about $110 off of bestbuy. That way you get the speed on your laptop and but you will also have the space on your external hard drive.
apple takes care of customers especially at the point of sale so it sounds like it worked out well. They took care of me when I bought a loaded MBPRO 15" and the next week the new model came out. I was very happy with how they handled my issue. They are one of those companies where if they CAN make you happy they will.
Wouldn't it have been easier (and cheaper) to keep the original MBP, buy a cheaper SSD from Newegg et al, install the SSD yourself and put the original HDD in an enclosure? Not accusing, just wondering, since this is what I plan to do with mine.
It was another option but I decided I had the opportunity to send back and could just about wait for another to be delivered (work was mounting up).. It was 80 to upgrade to SSD as well which is a good price plus it would come fitted by Apple.

Agreed. Sure, they might feel a little over priced at face value but then you consider the ease of which they took my previous model back at no cost to me.. Plus the build quality, the OS and even the community is excellent.
I had a Sony Vaio previously. The build quality was poor (S series) - battery moved.. And the customer service was not great when I had an issue. Plus I had to reinstall the machine straight away to get shot of all the crap installed on it by Sony.
