Turn off your network connection after it's got past this stage (i.e. when it starts extracting the new firmware)

To clarify little bit more, click on the update and as the iTunes is extracting the package, turn off your internet connection to skip activation server verification.

Thanks for the workaround. For a moment there I thought I was going to go nuts. I am not a patient person when it comes to waiting on stuff like this. I want it NOW! :D

After the install, it tries to connect to itunes store... if your network is disconnected, it will give you an error. Reconnect (wifi, router, ethernet, etc.) and it continues. The network disconnect is just to bypass the install server.
 
This worked like a charm for me. I have 3.0 installed now. It's backing up now though which it has been doing that for the past 10 minutes. :rolleyes:
 
I was going to be so angry if I couldn't get it installed!!! Thank you for this awesome tip!!!! And now we wait :)
