To clarify little bit more, click on the update and as the iTunes is extracting the package, turn off your internet connection to skip activation server verification.

Thanks for the workaround. For a moment there I thought I was going to go nuts. I am not a patient person when it comes to waiting on stuff like this. I want it NOW! :D

Yea, everyone is saying this is working great.

But how does the phone activate if you turn off your network connection?

After the install, it tries to connect to itunes store... if your network is disconnected, it will give you an error. Reconnect (wifi, router, ethernet, etc.) and it continues. The network disconnect is just to bypass the install server.

This worked like a charm for me. I have 3.0 installed now. It's backing up now though which it has been doing that for the past 10 minutes.
