Quick question — I’m guessing that universal binaries are bigger than intel-only ones. Are they? But when installed do they install all of the code or do they do it selectively like the Apple TV?
Yes, they are. All architectures are included in all platforms. You can verify this with the lipo tool (e.g. lipo -detailed_info /Applications/iMovie.app/Contents/MacOS/iMovie).
 
Unless the amount of installed apps are minimal and locally stored data is nearly nil, that's going to be a terrible user experience. I say this having used a 128GB Mac extensively.
