5v x 2,1A = 10,5W

If the iPhone 8 support both (I have no idea, I didn't research the subject), the 9v would be faster

Cool. I can charge my phone with both rates, but I haven’t really checked to see what was faster.
 
The phone will charge faster with the charger that outputs a higher current. When using a given charger, the phone will pull the max amount of current it's capable of handling. Most phones these days can take at least 2.1A. Fast charge capable phones can pull more than that.
