I'm probably reading into this too much, but here goes.

Correct me if I'm wrong, but when the latest iPods went on sale (new shuffle and colored nanos..), the main page of the store beneath the picture of the new Shuffle said iPod Shuffle just $79.

I may be wrong about the "just", but I could've swore it said that because there was only one model Shuffle.

Looking again today (and I don't know how long it's been this way or if it was ever different to begin with), it says from $79.

I had to click it to make sure there wasn't a 2GB Shuffle available!

Does anyone know, or think maybe, if sometime in the not-too-distant future the Shuffle will see a larger storage capacity?

Steve, if you're listening, release a 2GB Shuffle for $99 and I will buy two. Promise. 😉
 
You're reading too much into it.

The from $79, applies to the entire iPod line.

i.e. "Apple iPods, starting from $79!"
 
Once you get beyond a gig, it's hard to navigate without a screen. Unless there is a substantial shift in Apple's thinking and a complete redesign, I suspect that the Shuffle is maxed at 1GB.
 
If the demand of the iPod shuffle is good, I think sooner or later a 2GB will come. On second thought, 2GB would be too big as zelmo said.
