Bit of preface: I jumped into Apple Music the moment it was released, expecting to love it. Like most other horror stories here, it messed everything up, deleting files, album covers, sorting albums by different artist names and titles and overall just messing up my carefully curated library. I turned it off and found that the space previously taken (and identified by iTunes) by the music now appeared as Other, which meant having to restore my entire phone just to get my music back. Since then, I've only been syncing music from iTunes to my iPhone, no Apple Music intermediary (I subscribed to Match after the debacle with Music but don't have it turned on through the iPhone).

Fast forward to a few days ago. I noticed that album covers on my iPhone were different from the ones on iTunes. Ditto some albums that originally came separately but I had mixed together. Since I'm syncing directly from my computer, I had no idea why this was happening, as it should just have taken the files directly.

Apparently, Apple connects to the cloud or their servers while syncing, and some metadata is embedded in return, which then causes some information to appear different from what you have on your computer. The very simple solution: go on airplane mode before you sync. Nothing will get embedded, and all your files will be well.

I don't know if this was common knowledge, so forgive me if I'm just reposting what others have said, but it was driving me crazy trying to figure out why this was happening. I hate that Apple has made this so complicated and unnecessary for all and the bugs just keep on coming, but at least this is a solution (for now).
