If you return a "new" iPad and receive a replacement, does the 14 day return period begin the day you receive the replacement, or is it still attached to when you received the original?

Probably depends on how they did the initial "return". Did they just exchange or did you get your money back and buy another one?
 
IIRC, at the Apple Store, the 14 day return window is determined by the original sale date, unless you completely RETURN the original item and then REPURCHASE a new one.

It was a pre-order. I live far away from an Apple store so this is through customer care. I am returning the original via pre-paid Fed Ex and when Apple receives it, they will send out a replacement. It is an exchange. Money was not refunded.

It will most likely be from the original date.
