About backups and restore

As far as I know, yes. I did that with my iPhone from an unlocked 2G to locked 3G, and everything is working fine. The JB apps won't get backed up. 😉

You can't that is fine. Just make sure to not be using categories when you do the restore/backup. Because that messes things up. If you want to backup the jailbroken stuff you can use AptBackup from cydia.
