I want to know the difference between appstore and adhoc.

Can anybody please tell me?

Ad hoc would be used for beta testing. Allowing you to distribute your app to up to 100 devices.

Appstore is straight releasing the app for anyone to download.

How they categorize the free and paid application?

Free and paid are checkboxes when you submit an app to Apple. You get to choose (and switch back and forth if you wish) for any apps you submit.
