regarding transfer of data on old phone to new phone: any reason(s) to use phone-to-phone or iCloud to phone?
 
I did iPhone to iPhone recently, and it transferred pretty much everything. Didn't have to log back into most of my apps (apart from Banking) as account details are transferred as well.

Last two years I have done the phone to phone transfer and it worked perfectly. The only thing I had to do is insert the 3 digit code for my credit cards and my new phone was set up exactly like my previous one.

I never gave a proper shot to phone-to-phone transfer. I might this time with the upgrade.
But iCloud to phone is not too bad if your internet download speed is decent. (50mbps and up)

Phone-to-phone transfers everything; iCloud does not. In most cases (like, say, apps) the new phone just downloads the apps from the store in the background. But in at least one case (Health data) that data is only stored locally on the phone and not in iCloud, so it cannot be restored from an iCloud data transfer.

one more question ..... what's the process to switch my Apple watch to the new phone?

‘Go into you watch app and unpair you’re watch from your current phone. This makes a backup of everything.

Then do the phone to phone transfer to your new phone.

Pair your watch on your new phone and it will ask if you want to start as new or use a backup, pick the backup you just made when you unpaired and you are done.

I did the iPhone 11 Pro to iPhone 14 Pro It was pretty seamless except it did not transfer my vaccination card and the CCV numbers for my debit card in the apple wallet. As other said I did have to do those things. No problem on getting the vaccination card transferred from the Health app and it was pretty quick.
