Hi
If I buy the apple universal dock with the aluminum remote will I be able to use the remote on the latest 21.5" iMac? And if so how will I be able to do so?

Yes. I think it works out of the box, no set up required. If it doesn't, take a look at System Preferences and pair it with your Mac.
