    A case?

I use the Booq Vyper, although it can't be bought directly from an apple store.

A laptop stand for your desk and external keyboard/mouse/graphics tablet for better protection of your back and shoulders ;) Being hunched over a desk is no good.

I have a see thru spek case which never comes off, and a further brenthaven case for travel use.

Well if you need an office suite, I'd recommend picking up a new copy of Office 2008 while you're at the Apple Store.

    Software?

That really depends on what you are going to do with your Mac and what you feel about the included applications as well as personal preference.

Don't bother with those, some people will recommend Onyx or other such pieces of software but in all honestly they seem to cause more problems than benefit.

The OS is very good at keeping itself tidy. If you are interacting lots with windows the perhaps a virus scanner would be worthwhile, not really my area but I have heard ClamAV(X) is a good one.

Apart from that see what you need as you go along is probably the best route.
