How come I need to click twice on the activity monitor to open it? If it isn't active, if I only click it once, it doesn't actually open the window, I have to click the icon again.

This isn't the case with any other program that isn't active (i.e Safari), one click opens the window right away
 
It's a weird behavior but I guess it's because it assumes you don't necessarily want to see all the data, just have it start collecting. If you Quit it with the window open, it will be open when you start it the next time.
 
If you have it on the dock, clck once and it will update one parameter *in the dock icon* -- a second click opens the window to show details. When it is open, click on the View options and set it up the way you like.
