Is this an easy one that I’ve just glossed over, or some fundamental reason you can’t add a new bookmark folder when adding a new bookmark in safari?

Add bookmark folder to safari

top left corner of the Safari page, you will see and click on "show sidebar" select bookmarks.
go to the bottom and right click on an empty space and select "new folder" and name it.
