Add / Remove column "categories" in

How does one change what columns are visible in a finder window? (i.e., Name | Size | Kind | etc.)

I must be slower / lazier than I think because I tried right-clicking the column heading and there is no "customize view" selection or similar.

Right Click..

Right Click the bar, select Show View Options (note the images displays Hide View Options because the window is currently displayed) and choose your columns.
