I think I know what you mean. Yes, you can look at when a person signed on and how long they've been on by hovering over their name ... that is, if they are online. But, when a person signs off, it is not possible for Adium to tell you when the person originally signed on.
Whether it's possible Adium can in the future is not known to me, because I'm not sure of AIM, MSN, Yahoo!, etc keep records of people signing on and off.
However, there is a solution, but it's kind of complicated. You get onto Adium, open up a message window of the contact you wish to know when they sign on and sign off (that is, if you open up the message window BEFORE they get online), and whenever they sign on and sign off, it will be displayed in your message window. And, if you keep logs of your conversations, the times they sign on and off will be stored there as well.
I can go ahead and ask at the Adium forums what exactly AIM, MSN and Yahoo! does in terms of keeping times and whether they can do anything about it. Perhaps they have better solutions than me, but I've been using Adium since 1.5.1 (another words, LONGGG AGO), so I think that's as good as it gets for the time being.
