After a full restore from new iphone does the crash log and all other info geniuses usually access to identify problems disappear or reset with everything else?

Are you setting up the phone as a new one or just restoring from a backup?

From what I can tell the crashlogs are kept for all your devices. But then again, I have not set up any of my devices as a new one...

The crash log isn't stored on the phone, it is on your computer. If you use a Mac you can see it through the console.app. I would figure in generating the new device name that it wouldn't delete existing data, it would create a new folder and begin putting the logs there.
