I installed snow leopard on to my 10.5 mac completely and it prompted me to restart.

A few minutes later the computer froze in the grey screen with the loading circle. I manually powered it off and then on. Then I was welcomed with a grey screen with nothing on it. I can constantly boot from the DVD and access the installation, but the old drive is not accessible.

I have no idea what this means, or what to do next?

you successfully burned a retail copy of Snow Leopard onto a DVD... in other words you have a pirated copy of Snow Leopard. We don;t help with piracy here.
