The question I have is quite simple, but I can't seem to find an answer to it (or I just don't understand the ones I find). Is it possible to have an Airport Extreme running a wireless network and extending it by connecting an Airport Express to the Extreme with an ethernet cable?

You connect both devices using Ethernet and you make sure that both wifi networks have the same SSID. Also, you put the Express into bridging mode.

That's how I have mine setup. Works great.

thats what i have. set the express on bridge mode. works great.

Be sure to check the box that says "Allow network to be extended" on your Extreme for the wifi extension to work properly.

Terrific, thank you guys :)

Well, you don't have to connect the Extreme and the Express via Ethernet. It kinda beats the purpose. You just put them in range, and allow extend the range option. Also, they have to have the same SSID.
