My partner's using an iPhone 6 and Air Pods (2nd Generation). When she either removes the Air Pods while on a call, or installs them to use while on a call, the call itself is disconnected.

When I do the same with my Air Pods (same generation) and my iPhone XR, I either: see my phone switch to the headset speaker when removing my Air Pods or: see my Air Pods take over for the call when installing during the call.

Anyone know why this may be happening to her and how to correct this issue?

I have often read about such problems with Apple audio accessories. Unfortunately, I have no answer on how to fix this problem. I would most likely go to the nearest Apple store and ask there.

Maybe a limitation of Bluetooth 4.2 (iPhone 6) vs. Bluetooth 5? Instead of handing off, the connection is cut and the iPhone 6 reads it as an End Call action?

Are you sure it's not something in the settings. Check if it's set to disconnect when remove.
