Is there a way to airdrop my entire cameral roll from one iPhone to another iPhone, without having to select each photo one by one?

You don't have to select each photo one by one but you can select each "moment" which creates little groups of photos based on time and location which is much easier but can still take a while if you have a lot of photos.

Open the photos app and tap on the "Photos" tab on the bottom left. Make sure your in the moments view and tap select on the top right. Now, next to each moment you'll see it'll say "select" instead of "share". Tap it to select each moment and then share it like you would through airdrop.

I think it would be easier to do the following:

Go to camera roll, click on select on the top right, individually select any photos on the bottom row (unless that row is complete, in which case skip this instruction). Then press the bottom right photo and drag finger across to the bottom left, then without lifting finger drag to top left corner and wait until they're all selected. It's important to start at the bottom as there's no function to scroll down while selecting, only scrolling up.

This worked perfectly. Thanks so much!
