Does AirPlay 2 support multi-channel sound (7.1) wirelessly or would it have to be via HDMI cable?

Why?
It can. See the attached screenshot.
However, I am still using iTunes (could it still be AirPlay 1?).
With iOS 13 and TV app, I can not airplay anything to aTV 4K (latest tvOS).
