Airplay and iOS 10

I would like to use Airplay the old way where I can use it without mirroring (streaming audio and video) Anyone have any ideas? As an example, mirroring doesn't work well in all apps (i.e NFL app). I can only get the audio to work and not the video.

On the home screen, swipe up and right for the music control. Airplay from there, it is the standard Airplay not mirroring.

Sorry if I didn't make myself plain enough/ I dont want to use it to stream Audio I want to use it for Video playing on my apple tv without mirroring

Do you use a specific app for that? Anyways, the way I described is the same for video. Just try it.
