Wouldn't this be the obvious implementation of touch controls:

-press and hold for Siri

-tap once to either answer call, end call or play/pause media

-double tap to skip track

-triple tap for previous track

-swipe up to increase volume

-swipe down to decrease volume

What do you think is preventing Apple from going with these obvious gestures that we're familiar with? I mean, the AirPods recognize touch right...

Those would be nice but from what I've read it uses the accelerometer to know you tapped it so theres no way a swipe or hold gesture could work.

And the other option would be controlling the volume directly through your iPhone. Which at least serves as an alternative.
