I would love to use my AirPods with my Windows 10 PC as a headset. Every time I try to use it with Cisco Jabber or Microsoft teams the speakers and mic cannot work at the same time. The mic sounds muffled to the person on the other end, sometimes the speaker is muffled on my end. I’ve tried a bunch of troubleshooting steps to no avail. In my google searches it seems like others have had the same issues. I thought I would come here and see if anyone has had success or had any other ideas. Seems like a fairly basic thing that should work.

Proprietary hardware and software. Bluetooth connections have been plagued by quality problems with any third-party device for quite a long time, back to Generation 1. I feel your lack of enthusiasm for this incompatibility that's even had issues with the company's own products and their interoperability.
You would be better off with a company who specializes in providing products that can be used across multiple manufacturer's devices and adheres more closely to the standards for how they interact, such as Bluetooth. Strictly speaking about AirPods; unless you've got multiple Apple products that you want to switch between, then there's nothing about them which is unique to their overall features or build quality.

Sennheiser, B&O, Klipsch, Sony, eh (some say Bose),M&D, heck even Creative, which has been in R&D of audio products for over 30 years produces a decent earbud with mic. Plus, many others.

Use the Jabra Bluetooth Dongle. No issues with my Powerbeats Pro.

Skyper, MS teams works fine and internal corporate phone system has no issue with call quality.

For videos there is no lag between the sound and the speaker's talking.
