Ok, I admit this is a stupid question, but I'm confused. What do MPC's do? I've heard people rave about them, but in the short time I've used one in a store, I can't for the life of me figure out what it does.

Not sure how much they've evolved as my only experience of them is back with the MPC60.

They're a sampler/drum machine/hardware sequencer.

Pretty much the same premise across the product line, but every new model adds a few more bells and whistles. Hard drive, cd burner, auto-chop, onboard EQ and effects.. etc. There is even a ultra-portable battery operated version now, the MPC500. Then there is the newest monstrosity, the 5000. I eventually moved over to the Roland MV-8000 for a while, then switched to software. Reason 4 on my MBP with an Axiom controller gives me pretty much everything I had with my old MPC and my Ensoniq (long discontinued) ASR-10 combined.
