So me having to jailbreak all the time, will this do damage to my touch? or should i just wait for a new jailbreak software to come out ?

and once i jailbreak again, all my software will be still loaded on the touch ? like cydia and winterboard? becuase i think last time cydia was wiped from the touch

No, it shouldn't damage your ipod. Sure, you are free to wait for a full jailbreak but you might be waiting a long time!

And last time, you restored your ipod, which of course wiped the jailbreak, including cydia, from it. When you run blackra1n again, you aren't really jailbreaking it again or restoring it, you are just starting it back up -- kicking it past the "connect to itunes" screen, basically. So all your apps, data, music, etc would all be there just the way it was before your ipod turned off or rebooted.
