Title says it all, I have a 2015 MacBook Pro and want to get away from Apple's OS and Windows - what will run easily on a 2015 dual graphics 15 inch MacBook Pro ?

If you don't want to run macOS and Windows on your mac, that only leaves Linux. I'd probably opt for POPOS or Ubuntu. My prior experience with Macs and Linux are such that you will most likely run into a number of driver issues and will require some manual configurations and finding device drivers to get your system fully functioning.

Burn some live DVDs or make a bootable USB stick of various Linux distros and see which one you like the most. :)

Thanks, in terms of the dual graphics, will most distros recognize the Radeon M7 ?

Yes. All distros actually. No need to install any drivers.
Go with Elementary OS for start, rather similar to Mac OS. Also try out Pop OS, Ubuntu and some others.

Echoing the others, try Ubuntu, Pop_OS!, Mint, or Elementary. All good choices for new to Linux people.

If you want a Mac like experience then elementaryOS would be my pick. It’s more focused on usability and inherent icons. In other words the Menu Bar that most apps have really isn’t a thing with elementaryOS UI designer apps. It’s very fast and fluid.

Ubuntu would be my next recommendation as it uses Gnome 3 - albeit a little older as they usually run 2 versions behind the latest. I think 20.04 Ubuntu uses Gnome 3.20 and I think latest is 3.22 - no option to upgrade so if you need the bells and whistles of .22 no dice.

I've been running ubuntu for a few years now and it's quite good. Instill have win10 as a backup with dual boot.
