I was using an old macbook pro today, and I noticed it had an Ambient Air sensor. I looked on mine (Mid '07 Santa Rosa) and I can't find it. Did apple remove the ambient air sensor?

Do you mean Ambient Light Sensor? If so, it's still there.

if you mean the light sensor that's the little circle to the left of the webcam.
 
No, the ambient air sensor. It showed the external temperature within 1 degree of what our thermostat read

I believe Apple removed the AAS with the SR models. They also used to be in at least the Mac mini, but I think they're gone from those as well. Nobody really used it.
 
What was the point of it? how was it used?

I assume it was so people could see whether or not the ambient temperature was within the operating limits of the machine, but they made it somewhat inconvenient to access the panel or whatever it was that you used to view the temperature, so I doubt anyone ever used it.
 
Ambient Air Sensor? Never heard of it. I assume it detects nasty farts and shuts down your Mac when needed. Shrug.

Although few people used it, I find that it would be really nice. There are many times I've wanted one on my iPhone 😛
