Sometimes a lot more if you have slow Internet to download the update.

That a while. Guess not even the Ultra watches install/update faster.

Feel like the iPhone and iPads install/update faster though I know they have more powerful hardware.
 
The watch will download the update much faster if you turn off Bluetooth temporarily. This will force the watch to use wifi, which while less energy efficient, is much quicker.
 
The update on my Ultra was the longest ever - it took about 75 minutes. Maybe I had a temporarily slow connection to the Apple server. When I subsequently updated my AW6, it took less than 15 minutes. Of course, the software was already on the phone.

If you care about how long the update takes, you should always pre-download it to the watch over Wifi prior to updating. Just turn off BT on the watch, kick off the download, then remember to turn BT back on again later.
