Need an Automator script that let you choose the time that the workflow will run.

I'm pretty sure you can't use Automator to schedule a run (although I could be wrong). The easiest thing to do would be to create the workflow and then schedule the run via another solution. I'd use cron, either at the command line or via a GUI like this one for example.

Could you set an alarm on iCal that will run the script at a given time? That should do it.
