Any application that truly benefits from 8GB ram?

Any application that truly benefits from 8GB ram or is the 8GB ram more for running multiple applications at the same time?

It's all a question of degrees. Audio applications like digital audio workstations for example almost always use sampled instruments heavily. Gigabyte piano-samples aren't uncommon, add a slew of other instruments and you quickly run out.
