Use iTunes to back up, then iExplorer to view the backup.

What do you want to do with the backup. If nothing just use itunes. Use ifunbox or iexplorer to view the backup.

iFunBox would be a very good choice. Love that programme. I use it all the time, apart from iTunes. You could transfer entire photo library/camera roll and music library from your iDevice to your computer. Works for apps too.
