After I update an iOS device, I usually have the .ipsw file in my trash. What I have been doing is dragging the file out of trash and keeping them all in a folder. Can these be used for anything after the fact or is what I'm doing just a waste? Thanks in advance.

If you need to restore your iPhone, you'll save some time by not having iTunes download the firmware again.
