... Aso threw me for a loop because initially I went to sign up for them and it said they were no longer taking orders. Didn't seem promising that they couldn't keep up with demand...
That actually impressed me. It shows that they are not willing to give up the quality of their hosting in exchange for more money. They could easily sell their "extra" storage space that customers have paid for (but aren't using), but instead they limit the number of orders they except so that doesn't happen.

I looked at it the other way around, everyone suggested them, I need to make a move with my site and I goto sign up and can't. Not to mention doesn't look like they are thinking ahead to the future and ready for any demand which may come there way. It doesn't look promising, if they are maxed out to where they can't hosts anymore sites or investing the money ahead of time to have enough servers.

seems like everyone really likes a company for a period of time then begins to like another..

That should tell you one thing. There is no perfect web host. No matter where you go, you will eventually have a hiccup here or there. It's all software and services run and used by people so there are bound to be problems. And being on a shared server multiplies your chance of downtime much more.

I disagree. Asmallorange.com stop signups quite regularly. You should appreciate this, because hosts like dreamhost.com don't make such sacrifices to ensure quality.

Even though I said I was scaling my hosting with ASO back, it's not because they aren't a great host. I just needed site5.com's outrageous bandwidth. I now notice that site5.com don't even offer the plan that I signed up for anymore, so that's not too promising.

Anyways, don't overthink this. Asmallorange.com and site5.com, two sites that I have experience with, are fine choices. ASO.com is fantastic in that you can go month-to-month without setup fees. If their stats are enough for your site, go with them.
