I have a 27" iMac. With my previous display (for a Windows desktop) allowed me to control the contrast right from the monitor itself. All the iMac seems to have is the "calibration" program that pops up in system preferences.

I'm trying to use a little less contrast because my 27" iMac constantly gives me headaches.
 
Typing "Contrast" in the systems preferences search directs me to the Universal Access panel, although you can only turn it up, at least on my computer.
 
Yeah, I can only turn it up.

And the monitor calibration application is too convoluted - I don't even know what most of that stuff means even though it says you can set the contrast there.

There is no bar to set it where you want it like in the Universal Access area.
 
Try moving this custom calibration into the /Library/ColorSync/Profiles/Displays directory and see how you like it. I messed with the contrast a bit.

Yeh you could just calibrate your display and make your own profile. This way you can also do some color correction if necessary.
 
iMac contrast control

You can control contrast by:
command+option+control and using the ‘.’ & ‘,’ (period & comma)
