Someone mentioned in another thread that they'll often also have one non-standard configuration in stock (I'm hoping for an M1 Pro with 32gb). Don't know for certain if this is the case, but years ago when I purchased a MBP from the local Apple Store, it was indeed what would ordinarily be a BTO configuration (I think it had a slightly higher resolution screen, and a faster CPU).Usually, they carry the pre-configured models, so like what you see on the site without making any changes.
